I'm bringing Breakfast back...

I'm not even sure why I chose that title. It just seemed right at the moment.
Yeah, so a LOT of dinners have been cooked and eaten since my last post. Sorry about that.

I don't have a grocery list or menu planned for this week because my in-laws were just here and we have a TON of left over food in the fridge, freezer, and pantry that I plan on using up throughout the week. So, this week is a fly-by-the-seat-of-your-pants kind of week.

So, tonight for dinner we had breakfast pizza because I had two pizza crust dough's thawed and needed to use at least one before they went bad. And also because on a chilly night when you don't really want to "cook" breakfast is always the choice of champions.

This was a really easy dinner. And my hubby and I like it. The kids...not so much. I guess my kids are just not breakfast people. They don't eat it much in the morning and they don't care for it equally as much at night.

Anyways here's what you need:
1 pizza crust dough (could use a bag mix, frozen, or a Pilsbury roll one, or even a precooked one I guess)
1 pound Italian sausage, cooked and drained
12 oz. frozen hashbrowns (in my case I didn't have any, so I made some with fresh potatoes from the pantry)
1 small onion diced
6 eggs (if you like it more eggy add more eggs)
1/2 cup milk
Shredded cheddar cheese (I used mexican blend and motz cuz that's what I had)

If you are using an uncooked dough, roll it out onto your pizza pan and bake it at 350 degrees for about 15 minutes. Don't forget to poke some holes in it with a fork, like I did, or you'll end up with a huge bump in the middle of your pizza.

Brown your sausage in a large skillet and drain, set aside. In the same skillet, brown your hashbrowns and onions. Once brown, add the sausage back in. In a bowl mix the eggs and milk, then add to the skillet. Salt and pepper to taste.  Let the mixture cook over med heat for about 5 minutes or until the eggs are a little bit firm.

Sprinkle the crust with some cheese. Flip out the egg mixture onto the pizza crust. Top with remaining cheese. Bake at 350 degrees for another 20 minutes or until the cheese is melted.
